You\u2019re in a high-stress environment where things are happening around you rapidly.\u201d<\/p>\n<p>That overlap made it easier for him to thrive when others burned out.<\/p>\n<p>\u201cThey weren\u2019t performing the way I was performing,\u201d he said, \u201cso I was able to climb the ranks.\u201d<\/p>\n<p>Chef Chad, who appeared on Top Chef and now operates <a href=\"https:\/\/www.trailfeast.com\" target=\"_blank\" rel=\"noopener\">Trail Feast<\/a>, also draws a direct connection between how military units operate and how he runs his kitchen.<\/p>\n<p>\u201cIn the kitchen, I\u2019ve trained my staff a certain way,\u201d he said. \u201cThey all work the line, they communicate a certain way.\u201d<\/p>\n<p>The attention to detail includes things like cutting tape instead of ripping it.<\/p>\n<p>\u201cIt\u2019s not about how it looks; it\u2019s about a standard,\u201d he said. \u201cIf I can trust that you\u2019ll cut the tape properly, I can trust that you won\u2019t mess up a recipe that has fifteen steps to it, or a pick-up on the foie gras, which is a very delicate thing to prepare. If I know you have the attention to detail for the tape, I know you have attention to detail to either work a position in my kitchen, or manage the team that works in our kitchen. There\u2019s a bit of the military.\u201d<\/p>\n<h3>2. Tiffany Moore: \u201cAre you limited by your mind? Or is your mind limitless?\u201d<\/h3>\n<p>After sustaining a serious spinal injury during a U.S. Army deployment, <a href=\"https:\/\/youtu.be\/iolTAhz2teQ?si=4mvY7C8txyfHtBTc\" target=\"_blank\" rel=\"noopener\">Tiffany Moore<\/a> was told she would never work in a kitchen. But Moore refused to accept that future.<\/p>\n<p>\u201cThis is the only thing that I want to do,\u201d <a href=\"https:\/\/www.escoffier.edu\/podcast\/9-tiffany-moore-army-veteran-culinary-entrepreneur\/\">she said on <em>The Ultimate Dish<\/em><\/a>. \u201cI had to push past the limits of my mind to complete this goal that I\u2019ve always wanted.\u201d<\/p>\n<p>When the VA declined Tiffany\u2019s request to attend culinary school in person, a social media scroll led her to Escoffier\u2019s online program.<\/p>\n<p>\u201cI said, \u2018Wait a minute, what is this? Online culinary school?\u2019 I filled out the information right there in the car\u2026 and by the time I got home\u2026 someone was calling me,\u201d she said.<\/p>\n<p>Moore graduated with honors in 2019, <a href=\"https:\/\/youtube.com\/shorts\/OexN7NB5u60?si=2SvEW89kZXey83To\" target=\"_blank\" rel=\"noopener\">gave the commencement speech<\/a>, and now leads a growing culinary brand\u2014including her upcoming farm-to-table restaurant, <a href=\"https:\/\/www.thelolapecan.com\" target=\"_blank\" rel=\"noopener\">Lola Pecan<\/a>.<\/p>\n<h3>3. Trenin Nubiru: \u201cDon\u2019t ask for permission to be yourself\u201d<\/h3>\n<p>After serving 20 years in the U.S. Army\u2014first as a saxophonist in the Army Band and later as a communications officer\u2014<a href=\"https:\/\/www.escoffier.edu\/blog\/success-stories\/trenin-nubiru-military-career-shift\/\">Trenin Nubiru<\/a> retired with a deep desire to reinvent himself.<\/p>\n<p>\u201cI sat around for almost a year and a half trying to figure out who I was, what I\u2019m supposed to do with all these new skills I have and how to repackage it,\u201d <a href=\"https:\/\/www.escoffier.edu\/podcast\/124-trenin-nubiru-culinary-reinvention\/\">he shared<\/a> on the podcast.<\/p>\n<p>That journey led Trenin to the kitchen. At Escoffier, he enrolled in and graduated from the <a href=\"https:\/\/www.escoffier.edu\/academics\/culinary-arts-online\/\">Culinary Arts<\/a> program, then did the same in the <a href=\"https:\/\/www.escoffier.edu\/academics\/baking-pastry-online\/\">Baking &amp; Pastry<\/a> program, diving in with the same energy he had brought to his military service.<\/p>\n<p>\u201cI told myself, Day One, \u2018I\u2019m coming here. I\u2019m open-minded. I want to learn absolutely everything,\u2019\u201d he said. His engineering background gave him an analytical edge, and his military training gave him the structure to push through complex technique work, especially in pastry and chocolate.<\/p>\n<p>More than anything, Trenin found purpose in teaching and connection.<\/p>\n<p>\u201cI don\u2019t talk to [younger students] about food; I talk to them about who they are,\u201d he said. \u201cWhat are you going for? What are your talents? Can I do that? Lance McWhorter: \u201c[My restaurant is] me on a plate&#8230; it\u2019s me on a soundtrack\u201d<\/h3>\n<p>After serving in both the Army and Navy and working as a firefighter, EMT, and security contractor, Lance McWhorter returned from Iraq searching for purpose.<\/p>\n<p>&#8220;I was just trying to figure out what was next in my chapter. Like, what did I really want to do, and cooking just kept coming up.&#8221;<\/p>\n<p><a href=\"https:\/\/www.escoffier.edu\/podcast\/10-lance-mcwhorter-food-competition-champion\/\">That decision changed everything<\/a>. Today, Lance is the executive chef and owner of <a href=\"https:\/\/heritagetyler.com\" target=\"_blank\" rel=\"noopener\">Heritage East at Culture ETX<\/a> in Tyler, Texas, a restaurant he calls \u201cme on a plate . . . It\u2019s me on a soundtrack.
