For this event, Cessalie Guevara paired with FTR owner Connie Ruel in developing and executing her own restaurant concept.<\/p>\n<p>Designed in the element of low-country, this summer Southern-style meal of watermelon gazpacho, oven roasted tomatoes with long beans, fig glazed pork loin with apple and fennel slaw and sweet corn ice cream was the menu Cessalie always dreamed of creating. On the subject of the event, Escoffier student Cessalie Guevara said it was an eye opening experience she is grateful for.<\/p>\n<p>\u201cThe entire process for me was really exciting,\u201d Guevara said. \u201cThe opportunity to create your menu with your own ideas &amp; flavors is just so awesome. A longtime industry professional, Ruel said the experience and education a pop-up restaurant gives is priceless. Covering everything from marketing to table settings, the event allows the student to get a real taste of what it\u2019s like to run a restaurant\u2014not just the kitchen.<\/p>\n<p>\u201cFollow the Ruel helped me understand the process of owning my own restaurant,\u201d Guevara said. \u201cIt was real-life experience because with Connie, you\u2019re not just focused on your pop up, you\u2019re also learning to multitask prepping for different events, food costing and advertising.\u201d<\/p>\n<p>And like Ruel had hoped, the knowledge and confidence gained through the process was irreplaceable.<\/p>\n<p>\u201cAfter finalizing the menu and doing costing, the anticipation builds up for that day,\u201d Guevara said. \u201cThe day of was great and after hearing and seeing that everyone loved my food\u2014it was just one of the best feelings.\u201d<\/p>\n","protected":false},"excerpt":{"rendered":"<p>For the second time since we began our partnership in May, an Escoffier student has created a pop-up restaurant with&#8230;  <a class=\"excerpt-read-more\" href=\"https:\/\/www.escoffier.edu\/blog\/boulder-student-life\/second-student-pop-up-restaurant-a-major-success\/\" title=\"Read Second Student Pop-Up Restaurant A Major Success\"><\/a><\/p>\n","protected":false},"author":23,"featured_media":6763,"comment_status":"closed","ping_status":"closed","sticky":false,"template":"","format":"standard","meta":{"_acf_changed":false,"footnotes":""},"categories":[1297],"tags":[1303],"class_list":["post-6761","post","type-post","status-publish","format-standard","has-post-thumbnail","hentry","category-boulder-student-life","tag-start-a-restaurant"],"acf":[],"yoast_head":"<!-- This site is optimized with the Yoast SEO plugin v26.6 -
