You probably picture a tall white hat and double-breasted coat, right?<\/p>\n<p>The chef\u2019s uniform has become a well-known symbol of status, influence, and of course, delicious food. It took time and thought for the chef\u2019s uniform to be what it is today and hold such symbolism. In his sketch titled, \u201cLe Maitre d\u2019Hotel Francais,\u201d two chefs stood next to each other, each donning white hats, double-breasted coats, and aprons tied around their waists.<\/p>\n<p>It wasn\u2019t until 1878 that the uniform became en vogue. Angelica Uniform Group started mass producing the outfit, making it readily available to chefs everywhere. <a href=\"https:\/\/www.escoffier.edu\/about\/history-and-timeline\/\">Auguste Escoffier<\/a>, the creator of <a href=\"https:\/\/www.escoffier.edu\/blog\/culinary-pastry-careers\/different-types-of-chef-jobs-in-the-brigade-de-cuisine\/\">Brigade de Cuisine<\/a> and our school\u2019s namesake, was the first to standardize the uniform. The chefs in the restaurants he managed in London were all required to wear the new chef\u2019s uniform.<\/p>\n<img decoding=\"async\" class=\"alignnone size-full wp-image-28007\" src=\"https:\/\/www.escoffier.edu\/wp-content\/uploads\/2019\/10\/Auguste-Escoffier-sitting-at-a-desk-768.jpeg\" alt=\"Auguste Escoffier sitting at a desk\" width=\"768\" height=\"508\" srcset=\"https:\/\/www.escoffier.edu\/wp-content\/uploads\/2019\/10\/Auguste-Escoffier-sitting-at-a-desk-768.jpeg 768w, https:\/\/www.escoffier.edu\/wp-content\/uploads\/2019\/10\/Auguste-Escoffier-sitting-at-a-desk-768-300x198.jpeg 300w\" sizes=\"(max-width: 768px) 100vw, 768px\" \/>\n<p>While the history of the chef\u2019s uniform has included some changes and modernization, the outfit still closely resembles Car\u00eame\u2019s sketch. Today, the uniform consists of a white hat, double-breasted coat, pants, and an apron around the waist.<\/p>\n<p>Each of these articles of clothing holds great symbolism and versatile function to the chef wearing it.<\/p>\n<h2>The Symbolic Chef\u2019s Hat<\/h2>\n<p>The first thing you think of about a chef is the tall white hat. The proper term for this hat is <em>toque blanche<\/em>. \u201c<em>Toque<\/em>\u201d is Arabic for hat, and \u201c<em>blanche<\/em>\u201d is French for white, translating the phrase to \u201cwhite hat,\u201d which was adopted by the French.<\/p>\n<p>A <a href=\"https:\/\/www.escoffier.edu\/blog\/culinary-arts\/a-history-of-the-chefs-hat\/\">chef\u2019s hat<\/a> carries great symbolism and speaks to a chef\u2019s experience and expertise. The height of the hat symbolizes how experienced a chef is. The taller the hat, the more experience he has.<\/p>\n<p>The number of pleats in the hat shows how many cooking techniques and skills the chef has mastered. The first is to keep the chef\u2019s hair out of the food. The second is for the staff to identify where the chef is in the kitchen quickly &#8211; they just have to look for the tall white hat.<\/p>\n<h2>The White Double-Breasted Coat<\/h2>\n<p>You may be wondering why a chef would dress in all white if they are cooking with sauces and oils that can easily stain.<\/p>\n<p>The reason a chef\u2019s uniform is white is to represent influence and an authoritative presence. It\u2019s also seen as clean and pristine, two qualities you would prefer someone preparing your food to have.<\/p>\n<p>The color also serves a functional purpose. White deflects heat rather than absorbs it; essential while working in a hot kitchen.<\/p>\n<p>The coat itself is an extremely versatile item in the chef\u2019s uniform. The heavy material protects the chef from heat, steam, and splashing liquids while cooking in a busy kitchen. Typically, the coat has long sleeves to cover the arms when reaching into ovens. The double-breasted jacket is reversible, so one can quickly present themselves cleanly by folding down the flaps over any stains.<\/p>\n<h2>The Pants<\/h2>\n<p>Running around a kitchen for hours on end means wearing comfortable and breathable pants. A chef\u2019s uniform usually has black or white houndstooth patterned pants because it hides stains and spills very well.<\/p>\n<p>The waist is typically elastic or a drawstring to provide comfort all day long. They are also made of lightweight and breathable material, perfect for hot kitchens. Chefs will wear an apron around their waists to protect their legs from hot spills, especially while carrying a plate or hot pot from the stove.<\/p>\n<p>These aprons usually end just below the knee, so the chef can quickly move around the kitchen without getting tangled in the fabric.
