{"id":52038,"date":"2024-11-05T07:00:08","date_gmt":"2024-11-05T13:00:08","guid":{"rendered":"https:\/\/www.escoffier.edu\/?p=52038"},"modified":"2024-12-04T07:53:00","modified_gmt":"2024-12-04T13:53:00","slug":"restaurant-industry-demographics-diversity-among-owners-and-employees","status":"publish","type":"post","link":"https:\/\/www.escoffier.edu\/blog\/world-food-drink\/restaurant-industry-demographics-diversity-among-owners-and-employees\/","title":{"rendered":"2024 Restaurant Industry Demographics: Diversity Among Owners and Employees"},"content":{"rendered":"<p>The restaurant and foodservice industry is not only one of the largest in the United States, it\u2019s also one of the most diverse.<\/p>\n<p>Generally speaking, both restaurant owners and restaurant employees represent more diverse populations than the broader economy\u2014though the details paint a slightly more complex picture.<\/p>\n<p>We compiled data on restaurant industry demographics from sources such as the U.S. Census Bureau, reports from the National Restaurant Association, and third-party industry surveys to provide a detailed view of the demographic makeup of restaurant employees and owners across racial, gender, age, and educational dimension, adjusted for population diversity in each state. <\/p>\n<p>In doing so, we can see a nuanced snapshot of how the restaurant industry mirrors\u2014and often surpasses\u2014national trends in diversity across ownership and workforce demographics.<\/p>\n<p>Let\u2019s take a look at the numbers.<\/p>\n        <div class=\"tmm-table-of-contents\" tmm-table-of-contents>\n            <div class=\"tmm-table-of-contents__title\">Table of Contents<\/div>\n            <div class=\"tmm-table-of-contents__list\" tmm-table-of-contents__list><\/div>\n        <\/div>\n        \n<h2>Demographics of Restaurant Owners<\/h2>\n<p>On the whole, restaurant owners are a more diverse group than business owners in the broader private sector. As we dig into the numbers, the data will reveal that rates of restaurant ownership by women and minorities are actually closely aligned with the diversity of the country, while those groups are not as well represented in the economy as a whole.<br \/>\n\t\n\t<div class=\"blog-article-callout-wrap\">\n\t\t<div class=\"blog-article-callout-text\">\nEscoffier found that rates of restaurant ownership by women and minorities are actually closely aligned with the diversity of the country.<br \/>\n<\/div>\n\t<\/div>\n\n\t\n<h3>Racial Demographics of Restaurant Owners<\/h3>\n<p>According to the National Restaurant Association, more than 4 in 10 restaurants are minority-owned\u2014in the private sector overall, only 3 in 10 businesses are minority-owned.<\/p>\n<p>However, a look at the numbers will reveal that this trend is not equally true for all minority populations.<\/p>\n<p>While business ownership is roughly the same between the restaurant industry and the private sector for both Black\/African-American and Hispanic populations, the percentage of restaurants owned by the Asian population is <strong>more than double<\/strong> the percentage of businesses owned by that group in the private sector as a whole. This means that the elevated rate of minority-owned restaurants is almost exclusively on account of the elevated rate of restaurant ownership within this one population.<\/p>\n<img decoding=\"async\" class=\"alignnone size-full wp-image-52041\" src=\"https:\/\/www.escoffier.edu\/wp-content\/uploads\/2024\/11\/Restaurant-Ownership-Demographics-pie-chart-768.png\" alt=\"Restaurant Ownership Demographics pie chart\" width=\"768\" height=\"837\" srcset=\"https:\/\/www.escoffier.edu\/wp-content\/uploads\/2024\/11\/Restaurant-Ownership-Demographics-pie-chart-768.png 768w, https:\/\/www.escoffier.edu\/wp-content\/uploads\/2024\/11\/Restaurant-Ownership-Demographics-pie-chart-768-275x300.png 275w\" sizes=\"(max-width: 768px) 100vw, 768px\" \/>\n<p>A look at the country\u2019s broader racial demographics makes this trend even more stark.<\/p>\n<p>Escoffier found that, while Black\/African-American and Hispanic populations are both <strong>underrepresented<\/strong> compared to their share of the population by roughly 30% (34.3% and 28.2%, respectively), the Asian population is <strong>overrepresented<\/strong> by 196.9%\u2014meaning that this population makes up nearly three times the share of restaurant owners compared to its share of the overall population.<\/p>\n<img decoding=\"async\" class=\"alignnone size-full wp-image-52042\" src=\"https:\/\/www.escoffier.edu\/wp-content\/uploads\/2024\/11\/How-Are-Restaurants-Investing-in-Technology-bar-graph-768.png\" alt=\"How Are Restaurants Investing in Technology bar graph\" width=\"768\" height=\"733\" srcset=\"https:\/\/www.escoffier.edu\/wp-content\/uploads\/2024\/11\/How-Are-Restaurants-Investing-in-Technology-bar-graph-768.png 768w, https:\/\/www.escoffier.edu\/wp-content\/uploads\/2024\/11\/How-Are-Restaurants-Investing-in-Technology-bar-graph-768-300x286.png 300w\" sizes=\"(max-width: 768px) 100vw, 768px\" \/>\n<p>(<a href=\"https:\/\/restaurant.org\/getmedia\/ad96e3a8-4fb1-492d-a5ae-0b3dd53a61ef\/nra-data-brief-restaurant-owner-demographics-march-2022.pdf\" target=\"_blank\" rel=\"noopener\">source<\/a>) (<a href=\"https:\/\/www.census.gov\/quickfacts\/fact\/table\/US\/PST045221\" target=\"_blank\" rel=\"noopener\">source<\/a>)<br \/>\n\t\n\t<div class=\"blog-article-callout-wrap\">\n\t\t<div class=\"blog-article-callout-text\">\nEscoffier found that America\u2019s Asian population is highly represented among restaurant owners \u2013 its rate of restaurant ownership is more than double its rate of business ownership in the broader private sector (19% to 8%), and nearly triple its share of the overall population (19% to 6.4%).<br \/>\n<\/div>\n\t<\/div>\n\n\t\nLooking at individual states, a few rise to the top in terms of minority restaurant ownership.<\/p>\n<h4>Top 10 States with the Highest Proportion of Minority-Owned Restaurants<\/h4>\n<ul>\n<li>Hawaii (64%)<\/li>\n<li>Texas (59%)<\/li>\n<li>California (58%)<\/li>\n<li>Georgia (55%)<\/li>\n<li>Maryland (54%)<\/li>\n<li>Florida, Mississippi (49%)<\/li>\n<li>Nevada (47%)<\/li>\n<li>New Mexico (46%)<\/li>\n<li>Virginia (44%)<\/li>\n<\/ul>\n<p>However, these numbers don\u2019t tell the whole story; a glance at the states at the top of the list\u2014Hawaii, Texas, and California\u2014reveals that these are among the most diverse states in the country, with the highest proportions of non-white residents. So it\u2019s not surprising that they should have high levels of minority-owned restaurants.<\/p>\n<p>In fact, given Hawaii\u2019s extremely high non-white population (78.4%), Hawaii\u2019s 64% minority restaurant ownership rate means that it is actually one of the states with the <strong>lowest<\/strong> rate of minority-owned restaurants compared to its population demographics.<\/p>\n<p>If we compare minority restaurant ownership to the non-white population in each state, the data tell a different story.<\/p>\n<img decoding=\"async\" class=\"alignnone size-full wp-image-52043\" src=\"https:\/\/www.escoffier.edu\/wp-content\/uploads\/2024\/11\/Top-10-States-for-Minority-Restaurant-Ownership-Compared-to-Non-White-Population-chart-768.png\" alt=\"Top 10 States for Minority Restaurant Ownership Compared to Non-White Population chart\" width=\"768\" height=\"785\" srcset=\"https:\/\/www.escoffier.edu\/wp-content\/uploads\/2024\/11\/Top-10-States-for-Minority-Restaurant-Ownership-Compared-to-Non-White-Population-chart-768.png 768w, https:\/\/www.escoffier.edu\/wp-content\/uploads\/2024\/11\/Top-10-States-for-Minority-Restaurant-Ownership-Compared-to-Non-White-Population-chart-768-294x300.png 294w\" sizes=\"(max-width: 768px) 100vw, 768px\" \/>\n<p>Looked at through this lens, Tennessee is the state with the highest level of minority restaurant ownership relative to its minority population; the rate of minority restaurant ownership is 34.07% higher than the state\u2019s minority population. There seems to be a regional trend here as well, with six of the top ten states located in the South.<\/p>\n<p>Interestingly, Escoffier\u2019s analysis found that the national rate of minority restaurant ownership (41%) closely matches the national non-white population (42.16%), indicating that restaurant ownership is actually broadly reflective of the diversity of the country as a whole.<\/p>\n<p>(<a href=\"https:\/\/restaurant.org\/getmedia\/ad96e3a8-4fb1-492d-a5ae-0b3dd53a61ef\/nra-data-brief-restaurant-owner-demographics-march-2022.pdf\" target=\"_blank\" rel=\"noopener\">source<\/a>)(<a href=\"https:\/\/data.census.gov\/table\/DECENNIALPL2020.P2?q=p2&amp;g=010XX00US$0400000\" target=\"_blank\" rel=\"noopener\">source<\/a>)<\/p>\n<h3>Gender Demographics of Restaurant Owners<\/h3>\n<p>Similarly, when it comes to women-owned businesses, the restaurant industry is more reflective of women\u2019s share of the total population than the broader private sector is.<\/p>\n<p>Almost half (47%) of all restaurants are at least 50% women-owned\u2014compared to 43% of businesses in the private sector overall. However, it\u2019s interesting to note the <em>scale<\/em> of women\u2019s representation in these states\u2014especially compared to women\u2019s underrepresentation in the nation as a whole.<\/p>\n<p>It\u2019s worth noting the regional trend that emerges here, too\u2014seven of the ten states form a contiguous band, from the Dakotas westward to Washington and Oregon.<\/p>\n<p>Also, Mississippi, Wyoming, and Washington appear on both lists, suggesting that these are the states with the most diverse restaurant ownership in the country.<br \/>\n\t\n\t<div class=\"blog-article-callout-wrap\">\n\t\t<div class=\"blog-article-callout-text\">\nEscoffier\u2019s analysis revealed that Mississippi, Wyoming, and Washington are the states with the most diverse restaurant ownership, as these three states ranked highly for representation by both women and minorities.<br \/>\n<\/div>\n\t<\/div>\n\n\t\n(<a href=\"https:\/\/restaurant.org\/getmedia\/ad96e3a8-4fb1-492d-a5ae-0b3dd53a61ef\/nra-data-brief-restaurant-owner-demographics-march-2022.pdf\" target=\"_blank\" rel=\"noopener\">source<\/a>) (<a href=\"https:\/\/www.census.gov\/data\/tables\/time-series\/demo\/popest\/2020s-national-detail.html#:~:text=%5B%3C%201.0%20MB%5D-,7\/1\/2024%20to%2012\/1\/2024%20%5B%3C%201.0%20MB%5D,-Monthly%20Postcensal%20Resident\" target=\"_blank\" rel=\"noopener\">source<\/a>) (<a href=\"https:\/\/wisevoter.com\/state-rankings\/male-to-female-ratio-by-state\/\" target=\"_blank\" rel=\"noopener\">source<\/a>)<\/p>\n<h2>Demographics of Restaurant Employees<\/h2>\n<p>As we saw with restaurant <em>owners<\/em>, restaurant <em>employees<\/em> are, by most major measures, a more diverse group than the broader labor force as well. And there are a number of indications that this group may be more diverse than the broader <em>population<\/em>, too.<\/p>\n<p>Let\u2019s break down the data to get a better understanding of restaurant employee demographics.<\/p>\n<h3>Racial\/Ethnic Demographics of Restaurant Employees<\/h3>\n<p>50% of restaurant employees belong to a minority racial\/ethnic group, compared to 41% in the rest of the labor force. Recall that the nation\u2019s non-white population is 42.16%\u2014revealing that the diversity of the total labor force is closely aligned with the diversity of the total population, while the restaurant workforce is <strong>significantly more diverse<\/strong> than the population at large.<br \/>\n\t\n\t<div class=\"blog-article-callout-wrap\">\n\t\t<div class=\"blog-article-callout-text\">\nEscoffier\u2019s analysis found that 50% of restaurant employees belong to a minority racial\/ethnic group, compared to a national non-white population of 42.16% \u2013 indicating that the restaurant industry is significantly more diverse than the population at large.<br \/>\n<\/div>\n\t<\/div>\n\n\t\n<img decoding=\"async\" class=\"alignnone size-full wp-image-52046\" src=\"https:\/\/www.escoffier.edu\/wp-content\/uploads\/2024\/11\/Ethnicity-of-Restaurant-Employees-vs.-Total-Labor-Force-bar-graph-768.png\" alt=\"Ethnicity of Restaurant Employees vs. Total Labor Force bar graph\" width=\"768\" height=\"717\" srcset=\"https:\/\/www.escoffier.edu\/wp-content\/uploads\/2024\/11\/Ethnicity-of-Restaurant-Employees-vs.-Total-Labor-Force-bar-graph-768.png 768w, https:\/\/www.escoffier.edu\/wp-content\/uploads\/2024\/11\/Ethnicity-of-Restaurant-Employees-vs.-Total-Labor-Force-bar-graph-768-300x280.png 300w\" sizes=\"(max-width: 768px) 100vw, 768px\" \/>\n<p>We can also examine data for several major restaurant industry job roles to reveal racial\/ethnic diversity on a more granular level.<\/p>\n<img decoding=\"async\" class=\"alignnone size-full wp-image-52047\" src=\"https:\/\/www.escoffier.edu\/wp-content\/uploads\/2024\/11\/Minority-Representation-in-Various-Restaurant-Industry-Positions-bar-graph-768.png\" alt=\"Minority Representation in Various Restaurant Industry Positions bar graph\" width=\"768\" height=\"733\" srcset=\"https:\/\/www.escoffier.edu\/wp-content\/uploads\/2024\/11\/Minority-Representation-in-Various-Restaurant-Industry-Positions-bar-graph-768.png 768w, https:\/\/www.escoffier.edu\/wp-content\/uploads\/2024\/11\/Minority-Representation-in-Various-Restaurant-Industry-Positions-bar-graph-768-300x286.png 300w\" sizes=\"(max-width: 768px) 100vw, 768px\" \/>\n<p>Escoffier found that non-white representation exceeded the national average in six of seven major restaurant industry positions; bartender was the only position that was less diverse than the broader population.<\/p>\n<p>The data also revealed that 45% of managers belong to a minority racial\/ethnic group\u2014the highest proportion of minority managers of any other sector of the economy.<\/p>\n<h3>Gender Demographics of Restaurant Employees<\/h3>\n<p>54% of restaurant employees are female, as opposed to 47% in the overall labor force. Which, logically, makes sense\u2014that younger workers would be more likely to fill these frontline positions.<\/p>\n<p>On the flipside, the most common positions for employees 55 and older are chef and manager, with (respectively) 15.7% and 15.6% of these positions going to people in that age group.
