But he had seen first-hand that it was possible to work in the food industry for years, even decades, and still not develop the skills he was after without a formal culinary education.<\/p>\n<p>Find out why Shai decided to attend Auguste Escoffier School of Culinary Arts, and where his education has taken him since graduation day!<\/p>\n<h2>\u201cI Was Worried About Developing Poor Habits\u201d*<\/h2>\n<p>For Shai, the time after college was one of uncertainty. With a degree in history from Texas A&amp;M, he wasn\u2019t sure what his next steps should be. He tried his hand at a tech firm and a marketing agency, but neither felt like the right fit long-term.<\/p>\n<p>\u201cI have to have a passion for something to really put my all into it,\u201d* he says.<\/p>\n<p>Then, the COVID-19 pandemic hit. With less than two years on the job market under his belt, it was hard to find employment. Shai found himself wondering what his next steps should be\u2026and he kept coming back to the kitchen.<\/p>\n<p>\u201cGrowing up, cooking with my grandma was my favorite thing to do,\u201d* he says. He particularly liked learning how to make her best Mexican dishes. Other than Grandma, Shai felt like he was the only one who could make those family favorites just right!<\/p>\n<p>During college, Shai spent some time working in restaurants, and he saw a future for himself in the professional kitchen. But the <a href=\"https:\/\/www.escoffier.edu\/podcast\/30-bob-scherner-technique-is-paramount\/\">technique and organization<\/a> he\u2019d seen left room for improvement. Determined to get the basics down right, Shai decided that <a href=\"https:\/\/www.escoffier.edu\/blog\/value-of-culinary-education\/how-to-get-into-culinary-school\/\"> was his next step.<\/a><\/p>\n<div class=\"quote\">\n<blockquote><p><img decoding=\"async\" class=\"alignright size-thumbnail wp-image-15394\" src=\"https:\/\/www.escoffier.edu\/wp-content\/uploads\/2023\/07\/Shai-Fernandez.png\" alt=\"Shai Fernandez\" width=\"150\" height=\"150\" \/>&#8220;I worked in [a chain restaurant], and there was a guy that had been there 30 or 40 years. But he still chopped parsley completely wrong. That\u2019s what I was worried about\u2014developing poor habits.&#8221;*<br \/>\n<strong>Shai Fernandez, Escoffier Austin Culinary Arts Graduate &amp; Lead Line Cook, The Four Seasons Nashville<\/strong><\/p><\/blockquote>\n<\/div>\n<p>He began researching his options, looking for a school that fit within his budget and wasn\u2019t too far from San Antonio where he was living at the time. With an affordable price**, a great reputation, and an <a href=\"https:\/\/www.escoffier.edu\/about\/campuses\/austin\/\">Austin campus<\/a>, Escoffier seemed like the clear choice.<\/p>\n<p>\u201cI filled out an application, and a day later they reached out to walk me through the process,\u201d* he recalls. Escoffier also helped Shai to relocate from San Antonio to Austin. \u201cEscoffier had a partnership with an <a href=\"https:\/\/www.escoffier.edu\/admissions-aid\/student-housing\/#austin\">apartment complex<\/a> in Austin and helped to get me set up. And [when I left Austin for my externship], they helped me find a student to take over that lease.\u201d*<\/p>\n<p>With the logistics handled, Shai enrolled at Escoffier\u2019s Austin campus to study for his <a href=\"https:\/\/www.escoffier.edu\/academics\/culinary-arts-austin\/\">diploma in Culinary Arts<\/a>!<\/p>\n<h2>Focusing on the Fundamentals at Escoffier<\/h2>\n<p>As a place to build on the basics, Shai found that Escoffier was just what he was looking for. The foundational skills he learned in Culinary Foundations, like proper stocks, sauces, and <a href=\"https:\/\/www.escoffier.edu\/blog\/culinary-arts\/8-knife-cuts-every-professional-cook-should-know\/\">knife skills<\/a>, have been invaluable for his daily work, both during his externship and in his later roles.<\/p>\n<p>He also learned a great deal that would come in handy in the <a href=\"https:\/\/www.escoffier.edu\/academics\/farm-to-table\/\">Farm to Table\u00ae<\/a> and <a href=\"https:\/\/www.escoffier.edu\/blog\/world-food-drink\/american-regional-cuisines\/\">Regional Cuisines<\/a> courses, especially during his hands-on industry externship at <a href=\"https:\/\/www.yolannashville.com\/\" target=\"_blank\" rel=\"noopener\">Yolan<\/a>. The restaurant has relationships with local farms and focuses on fresh, seasonal ingredients. \u201cI think learning those values and an appreciation for seasonal ingredients really set me up for success,\u201d* he says.<\/p>\n<div class=\"quote\">\n<blockquote><p><img decoding=\"async\" class=\"alignright size-thumbnail wp-image-15394\" src=\"https:\/\/www.escoffier.edu\/wp-content\/uploads\/2023\/07\/Shai-Fernandez.png\" alt=\"Shai Fernandez\" width=\"150\" height=\"150\" \/>&#8220;I think I\u2019ve used every [Escoffier] class at some point in my career.&#8221;*<br \/>\n<strong>Shai Fernandez, Escoffier Austin Culinary Arts Graduate &amp; Lead Line Cook, The Four Seasons Nashville<\/strong><\/p><\/blockquote>\n<\/div>\n<p>Shai also found a welcoming atmosphere at Escoffier, from the culinary training to the mentorship from <a href=\"https:\/\/www.escoffier.edu\/about\/chef-instructors\/\">Chef Instructors<\/a>.* He recalls Chef Instructor Scott Moore telling him, \u201cIt doesn\u2019t matter how successful you are or where you are. At some point, you\u2019re going to feel like a fraud or imposter. Pushing past that and believing in yourself is vital.\u201d*<\/p>\n<p>He also got some tough love from Chef Instructor Brian Felicella. \u201cChef Brian was great,\u201d Shai says. \u201cHe really took an interest in me. He was the first chef who would say, \u2018You\u2019re better than that\u2019 when you weren\u2019t up to standard.\u201d*<\/p>\n<h2>Externship at Yolan: Taking the Fast Lane to Fine Dining<\/h2>\n<p>When it came time to secure his <a href=\"https:\/\/www.escoffier.edu\/blog\/culinary-pastry-careers\/why-businesses-should-partner-with-culinary-schools-for-externships\/\">industry externship<\/a>, Shai reached out to Escoffier\u2019s <a href=\"https:\/\/www.escoffier.edu\/career\/\">Career Services<\/a> department. Together, they worked to narrow down what he was looking for. He knew he wanted to work with the best\u2014which for him meant fine dining. He was targeting <a href=\"https:\/\/www.escoffier.edu\/blog\/world-food-drink\/a-brief-history-of-the-michelin-guide\/\">Michelin-starred restaurants<\/a> or those of a similar quality. And he knew he wanted to work in Italian or <a href=\"https:\/\/www.escoffier.edu\/blog\/world-food-drink\/french-cooking-how-and-why-french-cuisine-came-to-rule-the-world\/\">French cuisine<\/a>.<\/p>\n<p>So Career Services suggested <a href=\"https:\/\/www.yolannashville.com\/\" target=\"_blank\" rel=\"noopener\">Yolan<\/a>, an Italian fine-dining restaurant in Nashville, Tennessee, led by Food and Beverage Partner Tony Mantuano. Chef Tony has a list of accolades a mile long, but they include a <a href=\"https:\/\/www.escoffier.edu\/blog\/world-food-drink\/which-chefs-have-earned-the-most-michelin-stars\/\">Michelin star<\/a> for Chicago\u2019s Spiaggia, a James Beard Award, and <em>twelve<\/em> James Beard nominations. He knew he wanted to get started right away, but he needed a place to live in Nashville. Fortunately, Yolan is located at <a href=\"https:\/\/www.thejosephnashville.com\/\" target=\"_blank\" rel=\"noopener\">The Joseph hotel<\/a>, and Shai was allowed to stay there while he got started at the restaurant and secured housing.<\/p>\n<p>While this position served as Shai\u2019s <a href=\"https:\/\/www.escoffier.edu\/blog\/value-of-culinary-education\/what-is-an-externship-and-are-they-paid\/\">externship<\/a>, it was also a full-time job with an intense pace. \u201cYou have to be extremely organized,\u201d he says. \u201cYour <a href=\"https:\/\/www.escoffier.edu\/blog\/culinary-arts\/what-is-mise-en-place-and-why-is-it-so-important-to-chefs\/\"><em>mise en place<\/em><\/a> has to be perfect or you won\u2019t be done in time.\u201d*<\/p>\n<p>Shai started on <a href=\"https:\/\/www.escoffier.edu\/blog\/culinary-pastry-careers\/the-garde-manger\/\"><em>garde manger<\/em><\/a> (the cold station) and was really thrown into the role. \u201cI think after the first week, I was working solo. I had to know what sauces needed prep, and what needed to be thrown out. I would have three hours to prep, and it\u2019s all made from scratch.\u201d*<\/p>\n<div class=\"quote\">\n<blockquote><p><img decoding=\"async\" class=\"alignright size-thumbnail wp-image-15394\" src=\"https:\/\/www.escoffier.edu\/wp-content\/uploads\/2023\/07\/Shai-Fernandez.png\" alt=\"Shai Fernandez\" width=\"150\" height=\"150\" \/>&#8220;Communication is very important! If you\u2019re behind, you have to let people know. If one station goes down, the whole restaurant is in trouble.&#8221;*<br \/>\n<strong>Shai Fernandez, Escoffier Austin Culinary Arts Graduate &amp; Lead Line Cook, The Four Seasons Nashville<\/strong><\/p><\/blockquote>\n<\/div>\n<p>He also worked the <em>entremet<\/em> station, plating proteins and preparing accompaniments like sauces and vegetables. He also prepared separate in-room dining menu items for hotel guests who ordered room service.<\/p>\n<p>As an extern and new employee, one might expect that there wouldn\u2019t be much opportunity for innovation or exploration at this point in Shai\u2019s career. But that\u2019s not the case! With his hard work and education in the fundamentals, Shai was trusted to work on a daily <em>amuse bouche<\/em>, a single bite served to each guest before their meal. He got to use ingredients they had on hand and make a suggestion to the chef. With the chef\u2019s signoff, Shai would put this bite together. Then, the chef would taste it and either approve it or make suggestions for improvement. One of his best dishes was tempura-fried shishito peppers served with puttanesca caper aioli.<\/p>\n<p>During Shai\u2019s time at Yolan, the restaurant was voted the \u201c#1 Restaurant in America\u201d by <a href=\"https:\/\/www.foodandwine.com\/best-us-restaurants-global-tastemakers-2023-7479889\" target=\"_blank\" rel=\"noopener\">Food &amp; Wine<\/a>. He is so proud to have been a part of such an impressive accolade!<\/p>\n<div id=\"attachment_27544\" style=\"width: 778px\" class=\"wp-caption alignnone\"><img decoding=\"async\" aria-describedby=\"caption-attachment-27544\" class=\"wp-image-27544 size-full\" src=\"https:\/\/www.escoffier.edu\/wp-content\/uploads\/2023\/07\/Amuse-bouches-with-Vichy-style-glazed-carrot-with-beet-molasses-chive-aioli-pickled-ramp-and-toasted-pecan-768.jpeg\" alt=\"Amuse bouches with Vichy-style glazed carrot with beet molasses, chive aioli, pickled ramp, and toasted pecan\" width=\"768\" height=\"903\" srcset=\"https:\/\/www.escoffier.edu\/wp-content\/uploads\/2023\/07\/Amuse-bouches-with-Vichy-style-glazed-carrot-with-beet-molasses-chive-aioli-pickled-ramp-and-toasted-pecan-768.jpeg 768w, https:\/\/www.escoffier.edu\/wp-content\/uploads\/2023\/07\/Amuse-bouches-with-Vichy-style-glazed-carrot-with-beet-molasses-chive-aioli-pickled-ramp-and-toasted-pecan-768-255x300.jpeg 255w\" sizes=\"(max-width: 768px) 100vw, 768px\" \/><p id=\"caption-attachment-27544\" class=\"wp-caption-text\">One of Shai\u2019s amuse bouches: Vichy-style glazed carrot with beet molasses, chive aioli, pickled ramp, and toasted pecan<\/p><\/div>\n<h2>Slow and Steady Growth<\/h2>\n<p>After over a year at Yolan and the other restaurant kitchens at The Joseph hotel, Shai was ready for his next challenge.<\/p>\n<p>He got a new position at <a href=\"https:\/\/www.fourseasons.com\/nashville\/\" target=\"_blank\" rel=\"noopener\">The Four Seasons Nashville<\/a>, working at the hotel\u2019s new <a href=\"https:\/\/www.fourseasons.com\/nashville\/dining\/restaurants\/riviere-rooftop\/\" target=\"_blank\" rel=\"noopener\">Rivi\u00e8re Rooftop<\/a> restaurant. \u201cRivi\u00e8re has been a very cool opportunity for me,\u201d he says. \u201cIt opened a week after I joined [The Four Seasons], so I\u2019m seeing it from the ground up. It\u2019s just me and the banquet chef right now, and it\u2019s a lot of work! Rivi\u00e8re can seat about 60, and it does get pretty busy on a nice day.\u201d*<\/p>\n<p>Long term, Shai would like to travel, and The Four Seasons is a great place for that. They\u2019re always opening properties in exciting new locations. He\u2019d also like to continue learning from Michelin-starred chefs\u2014which is certainly possible within The Four Seasons brand. <a href=\"https:\/\/www.fourseasons.com\/nashville\/dining\/restaurants\/mimo\/\" target=\"_blank\" rel=\"noopener\">Mimo Restaurant<\/a> within Shai\u2019s hotel is helmed by Michelin-starred Chef Aniello \u201cNello\u201d Turco.<\/p>\n<p>While he has considered seeking a salaried position, Shai is taking a thoughtful approach to his growth. \u201cI want to keep growing my technique, being the strongest cook I can,\u201d he says. \u201cIt\u2019s early in my career. With good habits (including but not limited to the right way to chop parsley) and a strong work ethic, he has already excelled in his first two roles out of school.<\/p>\n<div class=\"quote\">\n<blockquote><p><img decoding=\"async\" class=\"alignright size-thumbnail wp-image-15394\" src=\"https:\/\/www.escoffier.edu\/wp-content\/uploads\/2023\/07\/Shai-Fernandez.png\" alt=\"Shai Fernandez\" width=\"150\" height=\"150\" \/>&#8220;I think Escoffier was definitely a good decision for me.
