From <a href=\"https:\/\/www.escoffier.edu\/blog\/value-of-culinary-education\/how-chefs-make-use-of-math-and-science-in-the-kitchen\/\">recent high school graduates<\/a> to <a href=\"https:\/\/www.escoffier.edu\/blog\/financing-your-education\/gi-bill-for-culinary-school\/\">military veterans<\/a>. From experienced cooks and chefs to single parents who dream of running a <a href=\"https:\/\/www.escoffier.edu\/blog\/food-entrepreneurship\/how-to-start-bakery-business-from-home\/\">home-based bakery<\/a>.<\/p>\n<p>Through the <a href=\"https:\/\/www.escoffier.edu\/blog\/\">Escoffier blog<\/a> and <a href=\"https:\/\/www.escoffier.edu\/podcast\/\">The Ultimate Dish podcast<\/a>, we aim to share some of the inspirational stories from this diverse community. Get a peek into the minds of five recent Escoffier graduates, and find out how they\u2019ve overcome obstacles to pursue their passions!<\/p>\n<h2>The Power of Saying \u201cYes\u201d<\/h2>\n<p>Food stylist and Escoffier graduate Lisa Spychala\u2019s story could have played out very differently if she didn\u2019t make a habit of saying \u201cyes.\u201d<\/p>\n<p>Working as an associate producer for television lifestyle segments, she was involved in arranging shoots for chefs that showcased their food. During her early days in the industry, a food stylist would usually come on board to set up the plates for the shoot. But when the 2008 recession hit, her company was tightening its belt wherever it could, and expensive food stylists had to go.<\/p>\n<p>So when Lisa\u2019s boss turned to her and said, \u201cOh, Lisa, you could food style,\u201d she accepted the challenge.<\/p>\n<p>That decision set her off on the path of professional food styling\u2014a path she\u2019s been walking for over 14 years. She\u2019s worked with celebrity chefs including Anne Burrell, Carla Hall, Aaron Sanchez, and many more. She even made a commercial with Freddie Prinze Jr. and competed on <a href=\"https:\/\/www.foodnetwork.com\/shows\/chopped\/episodes\/chefs-best-friend\" target=\"_blank\" rel=\"noopener\">Food Network\u2019s <em>Chopped<\/em><\/a>!<\/p>\n<p>It was during her time on <em>Chopped<\/em> that she realized she still had a lot to learn. And that realization led her to <a href=\"https:\/\/www.escoffier.edu\/academics\/culinary-arts-online\/\">Escoffier\u2019s online culinary arts program<\/a>. They couldn\u2019t get rid of me because I was doing too many jobs.\u201d*<\/p>\n<div class=\"quote\">\n<blockquote><p><img decoding=\"async\" class=\"alignright size-thumbnail wp-image-15394\" src=\"https:\/\/www.escoffier.edu\/wp-content\/uploads\/2023\/02\/Lisa-Spychala.png\" alt=\"Lisa Spychala\" width=\"150\" height=\"150\" \/>\u201cWhen it comes to work, I always tell younger people that I\u2019m a \u2018yes\u2019 person. When my boss asked me, \u2018Can you food style?\u2019 my whole life would have been different if I\u2019d said, \u2018No. I\u2019m not doing that.\u2019\u201d*<br \/>\n<strong>Lisa Spychala, Escoffier Online Culinary Arts Graduate &amp; Food Stylist<\/strong><\/p><\/blockquote>\n<\/div>\n<p><a href=\"https:\/\/www.escoffier.edu\/blog\/success-stories\/pro-food-stylist-lisa-spychala-learns-new-tricks-at-escoffier\/\">Get Lisa\u2019s full story\u2014and see some of her food styling work!<\/a><\/p>\n<h2>Finding the Right Environment Can Make All the Difference<\/h2>\n<p>Escoffier Graduate and pastry chef Cassie Wallace wasn\u2019t \u201csupposed\u201d to be able to do a lot of things. Diagnosed with an auditory processing disorder at the age of 8, she has difficulty recognizing and interpreting sounds, especially in a noisy background. So her doctor told her that many normal childhood activities, like sports and music, wouldn\u2019t be available to her.<\/p>\n<p>But Cassie refused to be defined by these limitations. With a little individualized help, she was able to succeed in school and even earn her black belt in Tang Soo Do.<\/p>\n<p>As an adult, she loved to bake. But with her auditory difficulties, she wasn\u2019t sure if a restaurant would be a good fit. Still, she had a knack for making delicious baked goods. And when she learned that Escoffier had <a href=\"https:\/\/www.escoffier.edu\/academics\/baking-pastry-online\/\">online baking and pastry programs<\/a>, she was convinced that this was her next move. With a master\u2019s degree in social work, he helps to guide people through difficult times in their lives. He loved his career. But after the COVID-19 pandemic, he was feeling burnt out and needed something more.<\/p>\n<p>\u201cI still love social work,\u201d he says, \u201cbut I knew that I needed to switch up my life somehow and bring a little more balance into my life, a little more levity.\u201d*<\/p>\n<p>Chris wasn\u2019t content to settle for a \u201cgood enough\u201d life. He had always loved cooking, so he decided to see what was down the culinary career road. He enrolled in culinary school at <a href=\"https:\/\/www.escoffier.edu\/about\/campuses\/boulder\/\">Escoffier\u2019s Boulder campus<\/a> and relocated to Colorado. At school, he found students of all ages and all experience levels. Cooking alongside students just out of high school, he wondered if it was too late for him to succeed in culinary school. And he was chosen to speak at Escoffier\u2019s November 2022 graduation.*<\/p>\n<p>Chris hasn\u2019t given up social work. But now he has that creative outlet that he was looking for, through his food blog Cook Until Brown. And he envisions a future where he can work in food media, helping other people of color in the culinary world to make their voices heard.<\/p>\n<div class=\"quote\">\n<blockquote><p><img decoding=\"async\" class=\"alignright size-thumbnail wp-image-15394\" src=\"https:\/\/www.escoffier.edu\/wp-content\/uploads\/2023\/05\/Chris-Marhevka.png\" alt=\"Chris Marhevka\" width=\"150\" height=\"150\" \/>\u201cI wanted to make the most of my life, and I didn\u2019t want any sort of aspirations to go unspoken and unexplored. I figured now is the time to put it into action. So here I am.\u201d*<br \/>\n<strong>Chris Marhevka, Escoffier Culinary Arts Student, Boulder<\/strong><\/p><\/blockquote>\n<\/div>\n<p><a href=\"https:\/\/www.escoffier.edu\/blog\/boulder-student-life\/boulder-student-chris-marhevka-blends-social-work-and-culinary-arts\/\">Learn more about Chris\u2019 time at Escoffier and his plans for the future!<\/a><\/p>\n<h2>Confidence Comes From Taking Action<\/h2>\n<p>As high school graduation day approached, Oscar Beltran found he couldn\u2019t get as excited about the prospect of the traditional college experience as his fellow students. Was college really the right choice? Or was he just feeling pressured by the crowd?<\/p>\n<p>When the COVID-19 pandemic kept him home during his senior year, Oscar realized that what really made him happy was spending time in the kitchen. So just after graduation, he enrolled in Escoffier\u2019s Associate of Occupational Studies Degree in Culinary Arts in Boulder.<\/p>\n<p>Suddenly, 18-year-old Oscar found himself immersed in the world of food\u2014along with a substantially older student body. <a href=\"https:\/\/nces.ed.gov\/collegenavigator\/?q=auguste+escoffier+school+of+culinary+arts&amp;s=all&amp;id=454810#enrolmt\" target=\"_blank\" rel=\"noopener\">Most Escoffier students<\/a> are 25 or older. He kept to himself at first, intimidated by the age gap. But his <a href=\"https:\/\/www.escoffier.edu\/about\/chef-instructors\/\">Chef Instructors<\/a> drew him out of his shell. \u201cI learned that communication is super important,\u201d he says. \u201cI emailed a lot of the teachers secretly because I was too afraid to ask for help in front of the classroom. They would\u2026.[require me] to ask them in person instead. He found that he had a relative that worked at <a href=\"https:\/\/www.moonpalacecancun.com\/\" target=\"_blank\" rel=\"noopener\">Moon Palace Resorts<\/a> in Cancun\u2014although they had never before. This kind relative helped Oscar to secure an externship at fine dining spot Los Caporales at the resort, and even gave him a place to stay during his placement.<\/p>\n<p>The position took hard work. Oscar had to leave long before the sun rose to reach the resort by 5:00 am., and he pulled shifts at both Los Caporales and the hotel caf\u00e9. But he brought his Escoffier education with him and excelled in the kitchen! He even competed in an al pastor taco competition among the resort chefs\u2014and won.<\/p>\n<div class=\"quote\">\n<blockquote><p><img decoding=\"async\" class=\"alignright size-thumbnail wp-image-15394\" src=\"https:\/\/www.escoffier.edu\/wp-content\/uploads\/2023\/01\/Oscar-Beltran.png\" alt=\"Oscar Beltran\" width=\"150\" height=\"150\" \/>\u201cThe risk I took [doing my externship in] Cancun and joining that competition was amazing. I learned so much and met all kinds of new people and chefs.\u201d*<br \/>\n<strong>Oscar Beltran, Escoffier Boulder Culinary Arts Graduate<\/strong><\/p><\/blockquote>\n<\/div>\n<p>Oscar has come so far\u2014from a shy 18-year-old student to an international cook on his way to great things. It\u2019s been such a joy to see his confidence grow, and we look forward to watching his career!<\/p>\n<p><a href=\"https:\/\/www.escoffier.edu\/blog\/success-stories\/boulder-student-oscar-beltran-turns-an-externship-into-a-winning-opportunity\/\">Discover more about Oscar\u2019s Escoffier experience and his time in Cancun!<\/a><\/p>\n<h2>\u201cYour Mind Is the Strongest Muscle\u201d<\/h2>\n<p>U.S. Army veteran Tiffany Moore found herself in a tough spot. Medically retired from the army at just 29 after a spinal injury suffered in Kuwait, she was told that her dream of one day starting a culinary career was off the table. An injury that at first seemed minor had escalated until she was experiencing episodes of paralysis. Two surgeries helped, but she still experiences frequent pain. Long hours in the kitchen, bending, twisting, and lifting heavy objects created too strong a risk of re-injuring her back. So the VA told her culinary school was off the table.<\/p>\n<p>She was devastated. But a chance Instagram ad for Escoffier\u2019s <a href=\"https:\/\/www.escoffier.edu\/about\/campuses\/online-programs\/\">online culinary programs<\/a> turned things around. ??\u201cI received it as a message from God, from the Universe,\u201d* she says. And within 48 hours, she was enrolled. Completing school from home gave Tiffany the opportunity to get her education while also looking after her health. Since then, she\u2019s been working at her family\u2019s catering business, <a href=\"https:\/\/www.eventhallatcascade.com\/\" target=\"_blank\" rel=\"noopener\">Event Hall @ Cascade<\/a>. She\u2019s also working on opening her own restaurant, a farm-to-table concept in Atlanta that celebrates Black food history called Lola Pecan. In fact, she\u2019s won three major grants totaling $45,000 to help fund her restaurant!<\/p>\n<p>Faced with surgeries, chronic pain, and being told \u201cno,\u201d Tiffany had to ask herself, \u201cAre you limited by your mind? Or is your mind limitless?\u201d* She had to push through what she was being told and believe that she was on the right track. \u201cI feel that my purpose in this universe is to feed life,\u201d she says. \u201cAnd this is what helped me get through my issues in life.\u201d*<\/p>\n<div class=\"quote\">\n<blockquote><p><img decoding=\"async\" class=\"alignright size-thumbnail wp-image-15394\" src=\"https:\/\/www.escoffier.edu\/wp-content\/uploads\/2019\/07\/Tiffany-M.jpg\" alt=\"Escoffier online culinary arts graduate Tiffany Moore\" width=\"150\" height=\"150\" \/>\u201cYour mind is the strongest muscle in your body. It controls everything you do along with your nervous system. So if you lose the mental race, everything else goes away.
