If you don&#8217;t, it atrophies and you&#8217;re no longer able to take chances.\u201d<\/p>\n<p>One person who has been flexing his \u201crisk muscle\u201d recently is <a href=\"https:\/\/www.escoffier.edu\/\">Auguste Escoffier School of Culinary Arts<\/a> graduate Oscar Beltran. Trying new things has been a defining feature of Oscar\u2019s short time out of high school\u2014and so far, it\u2019s paid off with an international externship and success among tough culinary competition.<\/p>\n<p>Find out how Oscar\u2019s experience as a teen at Escoffier helped prepare him for his culinary future!<\/p>\n<h2>Pushing Back on the Expectation of a Four-Year College<\/h2>\n<p>Growing up in California, Oscar was always encouraged to try new things. His mother would insist that he sample new foods, expanding his palate at a young age. As a result, Oscar soon developed a love for food, flavor, and cooking.<\/p>\n<p>By age 17, Oscar wasn\u2019t sure what his next step should be. He considered pursuing music in a four-year college, but he wasn\u2019t as excited about the prospect as his fellow students. He felt like the odd one out, unable to share their enthusiasm for a traditional college experience.<\/p>\n<p>But as he talked to his friends, he found that he wasn\u2019t alone in his <a href=\"https:\/\/www.escoffier.edu\/blog\/value-of-culinary-education\/hate-college-try-culinary-school\/\">hesitation to attend college<\/a>. \u201cOne [friend] said that they didn\u2019t want to do a four-year college [either]. She wanted to be a stylist and go to cosmetology school instead. She felt [college] was being forced on her by other high schoolers and parents.\u201d*<\/p>\n<p>Interestingly, it was the COVID-19 pandemic that finally helped Oscar to find his path. Spending his senior year studying from home, he did most of the family cooking. \u201cThat\u2019s when it hit me,\u201d he recalls. \u201cI liked to cook, putting flavors together and expanding my [palate].\u201d* This realization, and the subsequent decision to go to <a href=\"https:\/\/www.escoffier.edu\/\">culinary school<\/a>, finally got Oscar excited for his next step after high school.<\/p>\n<p>After doing his research and finding that Escoffier had a campus in Boulder\u2014somewhere new to Oscar but not too far from his home in California\u2014he was sold. And at just 18 years old, Oscar enrolled at Escoffier, pursuing an<a href=\"https:\/\/www.escoffier.edu\/academics\/culinary-arts\/\"> Associate of Occupational Studies Degree in Culinary Arts<\/a>.<\/p>\n<h2>Escoffier Chef Instructors Pull Oscar Out of His Shell<\/h2>\n<p>While Oscar\u2019s fellow high school graduates were relaxing over the summer, Oscar was beginning his courses at Escoffier.<\/p>\n<p>\u201cIt was interesting coming out of high school with a bunch of teenagers and then immediately [starting] culinary school with a bunch of adults,\u201d* he recalls. <a href=\"https:\/\/nces.ed.gov\/collegenavigator\/?q=auguste+escoffier+school+of+culinary+arts&amp;s=all&amp;id=454810#enrolmt\" target=\"_blank\" rel=\"noopener\">Most Escoffier students<\/a> are age 25 or older, which made Oscar one of the youngest\u2014perhaps <em>the<\/em> youngest\u2014student in his classes.<\/p>\n<div id=\"attachment_25456\" style=\"width: 778px\" class=\"wp-caption alignnone\"><img decoding=\"async\" aria-describedby=\"caption-attachment-25456\" class=\"wp-image-25456 size-full\" src=\"https:\/\/www.escoffier.edu\/wp-content\/uploads\/2023\/01\/Oscar-and-another-escoffier-student-put-soup-into-bowls-768.jpg\" alt=\"Oscar and another escoffier student put soup into bowls\" width=\"768\" height=\"576\" srcset=\"https:\/\/www.escoffier.edu\/wp-content\/uploads\/2023\/01\/Oscar-and-another-escoffier-student-put-soup-into-bowls-768.jpg 768w, https:\/\/www.escoffier.edu\/wp-content\/uploads\/2023\/01\/Oscar-and-another-escoffier-student-put-soup-into-bowls-768-300x225.jpg 300w\" sizes=\"(max-width: 768px) 100vw, 768px\" \/><p id=\"caption-attachment-25456\" class=\"wp-caption-text\">Oscar at Escoffier\u2019s Boulder campus<\/p><\/div>\n<p>\u201cIt wasn\u2019t what I was expecting, since I had the mindset of a high schooler. I kept quiet [at first] because I didn\u2019t know how to talk to adults\u2026I didn\u2019t really want to say my age because I knew that they were all older. I felt like they might [treat me like] the little kid in the group.\u201d*<\/p>\n<p>Being so young, Oscar was very quiet in most of his classes. But he found that his <a href=\"https:\/\/www.escoffier.edu\/about\/chef-instructors\/\">Chef Instructors<\/a> wouldn\u2019t allow him to stay on the sidelines\u2014even though he tried.<\/p>\n<p>\u201cThe teachers are really helpful, and not only in the kitchen. I learned that communication is super important. At that time, I was already known as the quiet kid of the class who didn\u2019t talk that much and didn\u2019t want to introduce himself. I emailed a lot of the teachers secretly because I was too afraid to ask for help in front of the classroom. They would\u2026 [require me] to ask them in person instead. That was their plan to get me to communicate more.\u201d*<\/p>\n<p>This subtle guidance helped Oscar to get more out of his classes and make valuable connections with his classmates. In the end, Oscar found that his fears of the older students were unfounded.<\/p>\n<div class=\"quote\">\n<blockquote><p><img decoding=\"async\" class=\"alignright size-thumbnail wp-image-15394\" src=\"https:\/\/www.escoffier.edu\/wp-content\/uploads\/2023\/01\/Oscar-Beltran.png\" alt=\"Oscar Beltran\" width=\"150\" height=\"150\" \/>\u201cMy classmates were worth my whole culinary experience at Escoffier. I&#8217;m proud to call them my culinary family.\u201d*<br \/>\n<strong>Oscar Beltran, Escoffier Boulder Culinary Arts Graduate<\/strong><\/p><\/blockquote>\n<\/div>\n<p>Although he enjoyed cooking before attending culinary school, Oscar didn\u2019t have much experience to fall back on.<\/p>\n<p>\u201cI had no idea that there was so much <a href=\"https:\/\/www.escoffier.edu\/blog\/culinary-arts\/the-essential-glossary-of-cooking-terms-for-the-culinary-arts\/\">cooking terminology<\/a>. I didn\u2019t know <a href=\"https:\/\/www.escoffier.edu\/blog\/culinary-arts\/8-knife-cuts-every-professional-cook-should-know\/\">what a julienne was<\/a>. I thought, \u2018Who\u2019s Julianne, and why are we trying to work on her?\u2019 That was interesting, learning the terminology and the conversions for everything.\u201d*<\/p>\n<p>This foundational education opened up a whole new culinary world for Oscar! And it would prove invaluable in his next act.<\/p>\n<div class=\"quote\">\n<blockquote><p><img decoding=\"async\" class=\"alignright size-thumbnail wp-image-15394\" src=\"https:\/\/www.escoffier.edu\/wp-content\/uploads\/2023\/01\/Oscar-Beltran.png\" alt=\"Oscar Beltran\" width=\"150\" height=\"150\" \/>\u201c[Culinary school] was chaotic sometimes, because there were 20 people in the kitchen, but something about it was just comfortable. He learned that he had a relative who worked at <a href=\"https:\/\/www.moonpalacecancun.com\/\" target=\"_blank\" rel=\"noopener\">Moon Palace Resorts<\/a> in Cancun, so he used that connection to secure a position. He was placed at <a href=\"https:\/\/www.moonpalacecancun.com\/restaurants\/los-caporales\" target=\"_blank\" rel=\"noopener\">Los Caporales<\/a>, a fine-dining Mexican restaurant at the resort. But while he had an \u201cin,\u201d the experience was still intimidating.<\/p>\n<p>\u201cComing to Cancun was scary for me,\u201d* he says. His relatives in the area were total strangers to him. So while they kindly let him move in during his externship, it was still awkward to stay with people he\u2019d never met before.<\/p>\n<p>But just like his jump into culinary school, Oscar jumped into the unknown of Cancun. \u201cI didn\u2019t know the place I was staying at or the city of Cancun at all,\u201d he says. \u201cI didn\u2019t even know the hotel I was going to be working at. I got here with no idea. I knew the hotel was called Moon Palace, but that was all I had to go off of,\u201d* Oscar says.<\/p>\n<p>His daily commute to the resort required a 15-minute walk followed by an hour-long ride on public transport for a 5:00 a.m. arrival. Oscar describes the externship experience: \u201cWe would bring all our produce and product to the second-floor kitchen where we began to prepare our <a href=\"https:\/\/www.escoffier.edu\/blog\/culinary-arts\/what-is-mise-en-place-and-why-is-it-so-important-to-chefs\/\"><em>mise en place<\/em><\/a>. I would be assigned to a team member to help [with the breakfast service] from 7:00 a.m. to 11:30 a.m. After that, [we cleaned] for the dinner service. We would wash all the equipment and reserve any product that could be saved for tomorrow. Then I headed back up to work at a hotel caf\u00e9, mainly just as a translator or steaming milk for lattes.\u201d*<\/p>\n<div class=\"quote\">\n<blockquote><p><img decoding=\"async\" class=\"alignright size-thumbnail wp-image-15394\" src=\"https:\/\/www.escoffier.edu\/wp-content\/uploads\/2023\/01\/Oscar-Beltran.png\" alt=\"Oscar Beltran\" width=\"150\" height=\"150\" \/>\u201cI was 19 years old when I got [to Los Caporales], so they didn\u2019t have much confidence in me yet. But I felt like the skills that I transferred from Escoffier to the hotel really helped me move up the ranks, because they saw that I knew what I was doing. With some help from his chef manager and mentor, Oscar created his own taco recipe inspired by popular local flavors. I felt like once I presented mine, the other chefs would present something much better, and [the judges] would completely forget about my taco. The whole time I was presenting, I was stuttering and my voice was shaky. I felt like it was going to make me lose.\u201d*<\/p>\n<p>But when the judges reached their verdict, Oscar and a night shift chef had received first and second place. He was ecstatic! A run-off between the two winners ensued\u2014and all four judges again chose Oscar\u2019s taco.<\/p>\n<p>Now, there\u2019s a chance that Oscar\u2019s taco could live on in the master book of recipes at Moon Palace, long after he leaves Mexico. That\u2019s quite the journey for a 19-year-old who didn\u2019t know what a julienne cut was just a year and a half prior!<\/p>\n<div class=\"quote\">\n<blockquote><p><img decoding=\"async\" class=\"alignright size-thumbnail wp-image-15394\" src=\"https:\/\/www.escoffier.edu\/wp-content\/uploads\/2023\/01\/Oscar-Beltran.png\" alt=\"Oscar Beltran\" width=\"150\" height=\"150\" \/>\u201cThe risk I took [doing my externship in] Cancun and joining that competition was amazing. I learned so much and met all kinds of new people and chefs.\u201d*<br \/>\n<strong>Oscar Beltran, Escoffier Boulder Culinary Arts Graduate<\/strong><\/p><\/blockquote>\n<\/div>\n<h2>What\u2019s Next for Oscar?<\/h2>\n<p>Oscar\u2019s next step will be to find a job in California, close to home. He plans to save up and go back to school, either for <a href=\"https:\/\/www.escoffier.edu\/academics\/baking-pastry\/\">pastry arts<\/a> or for a business degree.<\/p>\n<p>Long term, he\u2019d like to work in London at some point, and possibly open a fine-dining Mexican restaurant of his own. \u201cWhen you think of Mexican food, you think of a big plate with beans spilling out one side and carnitas stacked high. Which is great. It&#8217;s my culture and I love it. But I want to show people the art behind it as well.\u201d*<\/p>\n<h2>Risks Can Pay Off!<\/h2>\n<p>As we\u2019ve seen, Oscar has stepped into new challenges\u2014even when they\u2019ve been intimidating ones. His willingness to take risks has earned him a solid start in the culinary world, and we look forward to seeing where that courage takes him in the future!<\/p>\n<div class=\"quote\">\n<blockquote><p><img decoding=\"async\" class=\"alignright size-thumbnail wp-image-15394\" src=\"https:\/\/www.escoffier.edu\/wp-content\/uploads\/2023\/01\/Oscar-Beltran.png\" alt=\"Oscar Beltran\" width=\"150\" height=\"150\" \/>\u201cI would say my choice of going to culinary school instead of a four-year college was worth it.
