So if it\u2019s best for a student to complete the cooking portion of their course late at night, during the day when their kids are at school, or on a day off from their job, they\u2019re welcome to do that!<\/p>\n<p>As they work through their assignments, students document their progress through a series of photos of their cooking process, plus a critical thinking narrative to help them relate cooking theory to their own hands-on work. They can also add notes on the completed dish, <a href=\"https:\/\/www.escoffier.edu\/blog\/culinary-arts\/how-culinary-students-explore-flavor-profiles\/\">using the Escoffier flavor wheel to assess what they\u2019re tasting<\/a>. Video Feedback with Guidance from Chef Instructors<\/h3>\n<p>The Chef Instructor can then <a href=\"https:\/\/www.escoffier.edu\/blog\/value-of-culinary-education\/how-chef-instructors-evaluate-student-dishes-online\/\">review each student\u2019s photos and summary<\/a>, reconstructing their cooking process and assessing it against industry standards and expectations, which become the basis for a personalized video feedback session. This can allow the student to hear where the exceled, and get suggestions for improvement that can help them grow as a culinarian.<\/p>\n<p>Professional chefs assess food primarily through sight, looking for things like grill marks, color development, sauce consistency, rise in dough and formation of breads. The instructor can determine what the student has done correctly (or not) based on looking at the results. The instructors also employ a common language through the use of the Flavor Wheel\u2013a series of 90+ common descriptors that help assess flavor\u2013but taste is always somewhat subjective, even in professional kitchens.<\/p>\n<div class=\"quote\">\n<blockquote><p><img decoding=\"async\" class=\"size-thumbnail wp-image-15394 alignright\" src=\"https:\/\/www.escoffier.edu\/wp-content\/uploads\/2014\/03\/jasper_j-1.jpg\" alt=\"Escoffier Chef Instructor Jesper Jonsson\" width=\"150\" height=\"150\" \/>\u201cIf I can\u2019t taste it, you have to verbally be able to tell me: Was it salty? Was it bland? Was it tangy? Note that there may be additional ingredients needed for all programs, which must be provided by the students. Students may also need additional tools including cookware, bakeware, a stand mixer, sheet pans, cutting boards, etc. Fortunately, most of these items can be easily found at a kitchenware store or in your kitchen already, and our faculty can be available to help students determine substitutions if they are missing a specific piece of equipment.<\/p>\n<h2>Other Types of Virtual Cooking Classes<\/h2>\n<p>For those who aren\u2019t interested in a degree or diploma, there are other types of online cooking classes available. For students who want to learn a few specific techniques or who don\u2019t have the resources to invest in an education yet, these classes may help bridge the gap.<\/p>\n<h3>Enthusiast Cooking Classes<\/h3>\n<p>Some students want to learn a specific skill or technique, but they also want the personal feedback of a Chef Instructor. For these students, <a href=\"https:\/\/www.escoffier.edu\/about\/cooking-classes\/\">virtual enthusiast cooking classes<\/a> could be the answer.<\/p>\n<p>These online courses are wonderful for the home chef who wants to learn basic skills or even a pro who wants to learn an advanced technique. Classes usually teach something specific, like how to make pizza or the secrets of quick breads. These courses can be a valuable introduction to some culinary topics, but they do have their limitations.<\/p>\n<p>To start, these are entirely pre-recorded courses and they may have thousands or even tens of thousands of students at any one time. Naturally, the instructors of these courses are not available to answer questions or provide feedback to this volume of students. So the flow of information is one way\u2014from instructor to student, without the student having the opportunity to get clarification or corrections.<\/p>\n<p>Also, these courses do not come with any kind of diploma or degree. They may include a certificate upon completion, but these certificates may not be helpful in <a href=\"https:\/\/www.escoffier.edu\/blog\/culinary-pastry-careers\/who-hires-online-culinary-school-graduates\/\">proving that a student has the requisite skills for employment<\/a>.<\/p>\n<p>Further, the completion rate for MOOCs tends to be low. Even at reputable schools like Harvard, Stanford, and MIT, the <a href=\"https:\/\/www.forbes.com\/sites\/dereknewton\/2020\/06\/21\/the-depressing-and-disheartening-news-about-moocs\/?sh=7f91aeff76ed\">completion rate of MOOCs hovers around 20%<\/a>.
