For others, it takes some time for various interests and passions to suggest a career path.<\/p>\n<p>For Auguste Escoffier School of Culinary Arts graduate and private chef\/educator Shane Witters Hicks it took trying out a different career entirely to realize that his heart was in the kitchen.<\/p>\n<h2>The Makings of a Plant-Based Chef<\/h2>\n<p>Shane loved math and the planets when he was young \u2014 so much so that thought he might become an astrophysicist when he grew up. But he also had fond memories of helping his mom, a wonderful home cook, in the kitchen.<\/p>\n<p>As a competitive athlete in his youth, cooking and nutrition were important to him. He started to develop his own healthy, plant-based meals to fuel his running.<\/p>\n<p>But while he enjoyed cooking, he saw himself working as a power systems engineer. He completed his undergraduate degree in physics with a minor in computer science and environmental sustainability, and then he was ready to start his new career. Shane Gives the Restaurant Life a Try<\/h2>\n<p>So what was the first step? Shane decided he should try the restaurant life before he invested in a culinary education. So he updated his <a href=\"https:\/\/www.escoffier.edu\/blog\/culinary-pastry-careers\/how-chefs-can-build-standout-resumes\/\">resume<\/a> and went from restaurant to restaurant to see if there were any openings for an inexperienced line cook. After about 18 months working in restaurants, he was ready to advance his culinary career further. But it was an intentional and temporary shift.<\/p>\n<p>Shane knew that Escoffier\u2019s traditional French curriculum would include a lot of butter, cream, and meat. He decided that in order to cook the best plant-based foods, he should know what the traditional versions tasted like first. [Since then, Escoffier has launched fully <a href=\"https:\/\/www.escoffier.edu\/plant-based-programs\/\">plant-based culinary school<\/a> degree and diploma programs.] He has no regrets about opening his eating habits during culinary school. \u201cI\u2019m really glad I did that,\u201d he says. \u201cI made everything, and I tasted everything.\u201d<\/p>\n<div class=\"quote\">\n<blockquote><p><img decoding=\"async\" class=\"size-thumbnail wp-image-15394 alignright\" src=\"https:\/\/www.escoffier.edu\/wp-content\/uploads\/2020\/03\/shane.png\" alt=\"Shane Witters Hicks, Escoffier Boulder Graduate\" width=\"150\" height=\"150\" srcset=\"https:\/\/www.escoffier.edu\/wp-content\/uploads\/2020\/03\/shane.png 300w, https:\/\/www.escoffier.edu\/wp-content\/uploads\/2020\/03\/shane-150x150.png 150w, https:\/\/www.escoffier.edu\/wp-content\/uploads\/2020\/03\/shane-125x125.png 125w\" sizes=\"(max-width: 150px) 100vw, 150px\" \/>&#8220;I said to myself, \u2018If I&#8217;m going to go to culinary school, I&#8217;m going to taste everything. I&#8217;m not going to hold back. I&#8217;m not going to be a vegetarian for this time.\u2019&#8221;<br \/>\n<strong>Shane Witters Hicks, Escoffier Boulder Graduate &amp; Private Chef\/Educator, The Soulful Spread<\/strong><\/p><\/blockquote>\n<\/div>\n<p>One of the biggest benefits that he found during his time at Escoffier was that not only did he explore <em>how<\/em> to cook, but <em>why<\/em> certain recipes are the way they are. Restaurants are fast-paced and non-academic \u2014 not an ideal learning environment. So I&#8217;m not quite there. But plant-based is still where my passion lies.\u201d<\/p>\n<h2>Finding Mentorship at Escoffier<\/h2>\n<p>Shane started to benefit from mentorship before he even enrolled at Escoffier!<\/p>\n<p>\u201c[Chef Jensen] was actually who I met when I first toured Escoffier,\u201d he explains, \u201cand he was probably the one who convinced me that this is where I want to be. He was so willing to work with me. I got the sense from him that the Chef Instructors here truly care about the students and the quality of the education. What more can you ask for from your education?&#8221;<br \/>\n<strong>Shane Witters Hicks, Escoffier Boulder Graduate &amp; Private Chef\/Educator, The Soulful Spread<\/strong><\/p><\/blockquote>\n<\/div>\n<p>During his program, Shane found two of his <a href=\"https:\/\/www.escoffier.edu\/about\/chef-instructors\/\">Chef Instructors<\/a> to be particularly <a href=\"https:\/\/www.escoffier.edu\/blog\/value-of-culinary-education\/from-education-to-entrepreneur-benefits-of-one-on-one-chef-mentoring\/\">valuable mentors<\/a>. Former Escoffier Chef Instructor Marcus Lepke taught Shane\u2019s <a href=\"https:\/\/www.escoffier.edu\/academics\/culinary-arts\/\">Culinary Arts program<\/a> \u2014 the \u201cmeat and potatoes\u201d of culinary school, as Shane describes it.<\/p>\n<p>\u201cGetting [Chef Lepke\u2019s] perspective on everything culinary was invaluable,\u201d Shane says. \u201cSince he was born and raised in Germany, he gave us a European view on cooking. He\u2019s started his own company, <a href=\"https:\/\/chefshenanigans.com\/\" target=\"_blank\" rel=\"noopener\">The Soulful Spread<\/a>, which offers two primary services \u2014 delivering meals as a private chef and teaching cooking classes.<\/p>\n<h3>Private Chef Services Make Clients\u2019 Busy Lives Easier<\/h3>\n<p>During the COVID-19 pandemic when people were eating out less than ever <em>and<\/em> trying to juggle working from home with remote schooling, Shane decided to offer <a href=\"https:\/\/chefshenanigans.com\/the-soulful-spread\/\" target=\"_blank\" rel=\"noopener\">private chef services<\/a> in the Boulder area. By offering <a href=\"https:\/\/www.escoffier.edu\/blog\/food-entrepreneurship\/how-to-start-a-meal-prep-business\/\">meal prep<\/a>, fully cooked meals, and delivery, he can take the work of meal planning, grocery shopping, and cooking off his clients\u2019 plates.<\/p>\n<p>While he encourages plant-based eating, he\u2019ll cook anything for his clients. And as a result, I think it&#8217;s actually kind of an expansion of your culinary capacities to cook plant-based.\u201d<\/p>\n<h3>Personalized Cooking Classes for Vegetarians and Meat-Eaters Alike<\/h3>\n<p>In addition to private chef services, Shane teaches <a href=\"https:\/\/chefshenanigans.com\/personalized-cooking-classes\/\" target=\"_blank\" rel=\"noopener\">personalized cooking classes<\/a>. He starts with a phone interview with the client to learn what they like to eat, and what they hope to learn. Then he customizes the lessons for each client, so no two are exactly alike.<\/p>\n<p>\u201cI am willing to create an experience based around any dietary preferences,\u201d he says, \u201cso definitely not restricting it to vegan or even vegetarian. But most people that come to me are desiring a vegetarian experience, which has been kind of eye opening for me.\u201d<\/p>\n<h2>Tips for Vegetarians at Culinary School<\/h2>\n<p>What words of advice does Shane have for vegetarians or vegans who are considering culinary school? Before he provides his suggestions, he makes his position clear \u2014 you don\u2019t have to give up your vegetarian or vegan diet to attend culinary school. And a good way to foster that sense of compassion is by going to a traditional culinary school like Escoffier. You\u2019ll only benefit from having that empathy for how other people eat.<\/p>\n<p>\u201cEven though my passion lies in plant-based and vegetarian, I do not judge anybody&#8217;s dietary choices. I&#8217;ve come to realize in the culinary industry that food is so emotional and cultural, and people have had such different backgrounds and upbringings. Working adults who are interested in starting a career around plant-based cuisine can now easily complete an <a href=\"https:\/\/www.escoffier.edu\/plant-based-programs\/\">online degree<\/a> or <a href=\"https:\/\/www.escoffier.edu\/plant-based-programs\/\">diploma<\/a> in plant-based cooking.<\/p>\n<p>Like Shane, you may have an education in a different field, or even a whole career in another industry before you realize that you want a future as a culinarian. And like Shane, you just have to take that next step to see if a career in food is right for you.
