Changing consumer trends, advancing technologies, and the needs of today\u2019s students mean schools must respond with new programming and curricula to stay current.<\/p>\n<p>This is what we see as the possible future of culinary education, and how we at Auguste Escoffier School of Culinary Arts are evolving to meet these new demands.<\/p>\n<h2>Entrepreneurial and Business Education<\/h2>\n<p>Many of today\u2019s young people aren\u2019t interested in having a \u201cjob\u201d that will pay the bills. They\u2019re often also looking to pursue a passion. While culinary school students share a common enthusiasm for food, many also dream about going down the path of entrepreneurship.<\/p>\n<p>Barriers to culinary entrepreneurship are lower than ever before. <a href=\"https:\/\/www.escoffier.edu\/blog\/world-food-drink\/restaurant-innovation-technology-trends-statistics\/\">New technology<\/a> and new service methods are putting entrepreneurship within reach without requiring extensive startup capital.<\/p>\n<p><a href=\"https:\/\/www.escoffier.edu\/blog\/food-entrepreneurship\/how-to-start-your-own-food-truck\/\">Food trucks<\/a>, ghost restaurants, <a href=\"https:\/\/www.escoffier.edu\/blog\/food-entrepreneurship\/how-to-start-bakery-business-from-home\/\">home bakeries<\/a>\u2014all are growing in popularity and are often easier to start than the traditional brick-and-mortar restaurant. Diversification of revenue streams will be a major component of the restaurant industry\u2019s future to reduce reliance on in-person dining. In fact, food waste in landfills accounts for <a href=\"https:\/\/www.rts.com\/resources\/guides\/food-waste-america\/#:~:text=Wasting%20food%20has%20irreversible%20environmental%20consequences%3A%20it%20wastes%20the%20water%20and%20energy%20it%20took%20to%20produce%20it%2C%20and%20generates%20greenhouse%20gasses%20%E2%80%94%2011%20percent%20of%20the%20world%E2%80%99s%20emissions%20%E2%80%94%20like%20methane%2C%20carbon%20dioxide%20and%20chlorofluorocarbons%2C%20which%20contribute%20to%20global%20warming.\" target=\"_blank\" rel=\"noopener\">11% of global greenhouse gases<\/a>.<\/p>\n<p>Future cooks should be educated on the importance of sustainability and food waste, so <a href=\"https:\/\/www.escoffier.edu\/blog\/culinary-arts\/waste-not-4-ways-chefs-can-reduce-food-waste\/\">they can be part of the solution<\/a>. This course can help students to understand the relationship between the food producer and the chef, and the environmental impact of farming, ranching, and fishing.<\/p>\n<p>On-campus students can work with local farmers and\/or food producers to better understand the nature of the local food economy, and online students may have the opportunity to participate in occasional in-person workshops (optional programming; not included in the curriculum.)<\/p>\n<h2>Balance Between Tradition and Innovation<\/h2>\n<p>Classical cooking education has a long history.
