It\u2019s the second biggest problem in the restaurant industry according to owners. Plus, turnover is both disruptive and expensive, with the <a href=\"https:\/\/pos.toasttab.com\/blog\/on-the-line\/restaurant-industry-challenges#:~:text=The%20Biggest%20Challenges%20for%20the%20Restaurant%20Industry&amp;text=High%20operation%20and%20food%20costs,they%20adapt%20to%20these%20challenges\" target=\"_blank\" rel=\"noopener\">average cost to replace a restaurant industry employee hovering at $6,800<\/a>.<\/p>\n<p>Finding staff and working to reduce turnover are constants in this industry. Stacey Jones, an Escoffier Pastry Arts graduate, completed her externship at hip Austin restaurant Sway.
